Honestly, there’s no real reason to think there’s a hidden finale for Stranger Things. By the end of season 5, episode 8, Vecna is taken down, the world is safe, and we catch a glimpse of what everyone’s future looks like.

What will most likely end up happening is a behind-the-scenes documentary, possibly landing on 12 January, that will actually be a meta-episode. It will show some never-before seen footage and special interviews of the cast while filming Season 5.
